Duck Dynasty premiere and old school Beef Stroganoff

Duck Dynasty premiere night! Here is what I’m making again. This time I don’t have any Round Steak OR Cubed Steak, so I am going to use a pound and a half of a ground elk and beef mix Rancher and I made. It tastes just like lean ground beef. In case it isn’t obvious, the freezer is a little bare and it will be Christmas come early when someone makes it up to Spokane to bring the half a beef that is ready and waiting up at the butcher shop here for my grilling, stir-frying, stewing, braising, taco’ing, chili’ing, whatever I want to do with it pleasure. Until then, it’s Ground Elk and Beef Stroganoff time!

I try not to bastardize a recipe until I’ve made it true to form at least once. But sometimes I’m too attracted to a recipe to wait to try it.

By sometimes, I really mean this happens a lot. This is the perfectly good recipe, with my substitutions in bold italics:

Beef Stroganoff from my 1970 Kitchen

1 cup butter
1 1/3 c finely chopped onions
1 1/2 pound sliced, fresh mushrooms
3 3/4 pound top round of beef cut into strips Cubed Steak
6 TB flour
3 bouillon cubes in 3 cups hot water 1/3 can beef broth + water & beefy onion soup mix
1 can tomato paste
2 tsp Worcestershire sauce
3/4 c sour cream
1 1/2 c Half & Half 2% Milk

Cooking instructions:

  1. Adding the ‘other’ meat sounds tasty! Being a teenager in the ’60’s and eating this version I’ll offer up an quicker-substitute version that my new ranching neighbor, Debi, served in the late ’70’s: Use egg noodles and sauce made of 1 can cream of mushroom soup, 2 cups of sour cream, any kind of beef cooked & marinated & cut into small pieces ( if you like add a packet of dried stroganoff mix). Compared to the ‘real’ recipe it sounds sacrilegious, but in a pinch it’s quick, easy, & good! Convenient if you’re late for the Duck show!
